Blueberry Quinoa Pancakes

Quinoa Blueberry Pancakes

4 pancakes per serving

INGREDIENTS
2.5 cups cooked quinoa
2 tsp. grapeseed oil can use other oil if you do not have grapeseed oil
1 cup almond milk
4 eggs
1 tbs. honey
1.5 cup blueberries
1 tsp. salt

INSTRUCTIONS
In a blender, mix milk, eggs, honey, quinoa, and oil together
Once smooth add salt and baking powder and blend for a few seconds
Preheat griddle and spray with cooking spray
Pour ¼ cup batter on the griddle
Sprinkle blueberries over the batter and cook
Once there are bubbles, flip and cook the other side
Pancakes are done when golden brown
